Hudson House, the upscale restaurant that boasts the world’s coldest martinis, will be bringing its chill cocktails and upscale vibes to Gilbert.
The restaurant will open at Heritage Park, the impressive mixed-use development on Gilbert Road in 2026, according to East Valley Now.
When it opens, Heritage Park will encompass one full city block, with more than 47,000 square feet of retail and dining space, public spaces and a landscaped courtyard, 288 multifamily residential units, and more than 300 parking spaces. Hudson House will join the three concepts already announced by Flagship Restaurant Group: Ghost Donkey, Palma, and Blue Sushi Sake Grill.
The Texas-based Hudson House is a popular, upscale restaurant by Vandelay Hospitality Group (VHG), founded by restaurateur Hunter Pond. Currently, there are nine locations, with more planned. The Gilbert Hudson House will be the first in Arizona.
Inspired by New York’s Hudson Valley, the restaurant offers freshly shucked oysters, sushi, steak frites, lobster rolls, a double smash cheeseburger, and more. Its best known for its “world’s coldest martini”, a shaken Vesper-style martini shaken then served in a frozen martini glass, garnished with olives. The restaurant also serves ice cold espresso martinis, the Bleu & Gold (with a bleu cheese salted rim), and rotating seasonal choices.
