Jimmy G’s to Serve Build-Your-Own Pastas in Mesa

This new pasta and salad spot will serve up nutritional meals made to your liking.

Calling all pasta lovers of Mesa: get your appetites ready for Jimmy G’s! The new restaurant is taking over the former Desi Fusion space at 1130 W. Grove Ave., near the southeast corner of Southern and Alma School Road. 

At Jimmy G’s, customers will get to select their pasta ingredients, then watch it get cooked right in front of them. There will also be a variety of salads served with housemade dressings free from unnecessary additives and preservatives. 

Everything at Jimmy G’s is so fresh that it will be one of the healthiest options on the market—even the veggies are roasted to maintain the ingredients’ nutritional value. That is one of the goals of owner Dylan Roberts, a restaurant industry veteran who is excited to embark on his first solo venture. 

“We just want to make food as good for you as we can possibly make it,” Roberts tells What Now Phoenix. He recently received the keys on a 1,200 square-foot restaurant space at the Grove Towne Shopping Center. 

In opening Jimmy G’s, Roberts also wants to give back to his community by providing jobs that pay a livable wage. “I’ve been in the industry for many years and have seen first-hand how hard people work only to receive minimum wage,” he says. “I intend to fix that by ensuring everybody gets to earn what they truly deserve.”

That said, Jimmy G’s is likely to start hiring in the near future as Roberts plans to open by the beginning of May. Until then, he and his family are hard at work making the space their own.
