Proof Bread, a bakery that started in a Mesa garage and now has three Valley storefronts, is expanding its location in northeast Phoenix at 3110 East Shea Boulevard.
The company, owned and operated by Jon Przybyl and Amanda Abou-Eid, has announced plans to expand one of its locations, adding more space to accommodate additional operations. The added 1,150 square feet—bringing the total space to 5,950—will enable the bakery to grow its pastry and proofing operations, establishing the location as Proof’s new headquarters. Przybyl tells What Now Phoenix that Proof Bread is working on a project over the next few months to enhance the customer experience at their Shea bakery.
When the team first opened their Downtown Mesa location, they created an open concept that allowed customers to be fully immersed in the environment of bread and pastry making, with seating positioned directly across from the bakers’ bench. However, due to growth and increased production needs, customer seating was removed. Now, in alignment with their original vision, they are developing an immersive experience at the Shea location by expanding into the adjacent unit, which will serve as the new Shaping and Pastry production suite.
The front patio will be extended to span both units, providing seated customers with a clear view of the new production area. Holes will also be cut into the shared wall so that customers inside the retail space can observe the bread shaping and pastry rolling processes. The customer area will undergo a significant redesign, addressing a long-standing issue with the layout that arose after abandoning a previous grocery concept tied to the closure of Main Street Harvest in Mesa.
This is a massive accomplishment for the ownership team, who opened their first brick-and-mortar location in downtown Mesa in 2020, followed by sites in North Phoenix and Litchfield Park. In 2023, they launched a third location at Eco PHX in downtown Phoenix, featuring a local market called Main Street Harvest. A fourth location is planned for Higley Commons in Gilbert later this year. Their offerings include naturally leavened sourdough breads, pastries, and locally sourced products.
