Proof Bread Planning Big Changes Following Second Location

The company is opening a third site, local market, and pizza window

Proof Bakery, the locally owned bakery that started in a garage, is preparing to open a new location in Downtown Phoenix at 301 W. Roosevelt St.

Co-owners Amanda Abou-Eid and Jon Przybyl started the company from their Mesa garage but were mandated to move into an official brick-and-mortar, which opened in Mesa in 2021. Now that the duo has opened its second location in North Phoenix at 3110 E. Shea Boulevard, they’re planning to make a few changes, including adding a new evening walkup window at their downtown Mesa location, opening a third site, and launching a local market called Main Street Harvest.

The first to happen is to open a third and, for now, last bakery in Fall 2023 in Eco PHX, a solar-powered apartment complex at Third Avenue and Roosevelt Street, according to Phoenix New Times. Here, the company will also launch Main Street Harvest, a local market that will serve as a test kitchen to pilot new bread and allow the bakery team to practice more advanced techniques. Customers can expect fresh produce and pantry items sold here. Main Street Harvest is expected to open in September 2023. While the site will also feature a patio, half of the space has yet to be accounted for.

The final change Proof Bread is making is adding a new late-night walkup window at their Mesa location at 125 W. Main St. Customers can expect sourdough pizzas and other sweets, such as cookies. The new “after-dark” window is scheduled to open in October 2023. In the meantime, Proof Bread will continue to use the Mesa location as the company’s primary spot to mix, shape, and proof its long-fermented sourdoughs. Once everything is up and running, Przybyl anticipates Proof will be able to serve 6,000 customers each week in-store and at farmer’s markets.
