Salad and Go, a fast-casual drive-thru restaurant chain founded in 2013 in Gilbert, is hoping to open a new location at the northeast corner of Happy Valley Road and Lake Pleasant Parkway in Peoria.
The restaurant was recently revealed to be one of three new tenants proposed for The Shops at Lake Pleasant, according to Upper West Side PHX. Considering the company hasn’t signed a lease for this space, it’s unclear if or when this Salad and Go will materialize. It does prove, however, that the company is very much interested in expanding throughout Phoenix, where it already has 63 locations.
Along Lake Pleasant Parkway, just south of Yearling Road, additional proposed tenants for the empty pads include Dutch Bros and Someburros. There are also rumors of two highly anticipated tenants coming to Lake Pleasant Town Center just to the south—both are requested businesses known for offering healthier options, with official confirmation expected soon.
Restaurants aren’t the only new tenants coming to this shopping center, which is expected to be fully operational by spring 2025. HonorHealth Complete Care is bringing a multipurpose facility with an ER and urgent care under one roof to The Shops at Lake Pleasant in Phoenix, expanding healthcare options in the area. Located just behind Wendy’s, Christian Brothers Automotive is nearing completion of its newest location.
The Shops at Lake Pleasant is a 16-acre shopping center developed by Vestar. The center encompasses approximately 90,000 square feet of retail and restaurant space as part of a $50 million project designed to enhance the area’s retail offerings. So far, several tenants have opened at the center, including Raising Cane’s, Over Easy, European Wax Center, Visionworks, Reformed Pilates, Tropical Smoothie, Restore Fitness, Handel’s Ice Cream, Cinnaholic, Wild Fork, and more.
Salad and Go will be an excellent fit for this area, considering it specializes in fresh, made-to-order salads, wraps, breakfast burritos, and bowls, all curated by Michelin-star trained chef Daniel Patino. Operating on a farm-to-fork model, the company sources ingredients directly from local farmers and suppliers, utilizing its own food production facilities in Phoenix and Dallas to prepare and distribute meals efficiently.
