Bottega Salaria is a new concept from culinary visionary, Valerio Lombardozzi, that is planned to debut in Fredericksburg this Winter. According to a recent Culture Map report, the new Italian osteria and artisan market will open in the former home of La Bergerie at 312 E. Austin St.
What Now San Antonio briefly spoke with Lombardozzi, who shared that the new Fredericksburg eatery is currently in the works with plans to open in the first or second week of February 2026.
“Bottega Salaria was born from a simple idea: to bring the spirit of Rome, its table, its garden, its marketplace, to Fredericksburg. Here we cook like in Italy: seasonally, locally, and with respect for tradition,” the Bottega Salaria website reads.
“This is more than a restaurant. It’s an osteria, a fraschetta, and soon, a bottega where you can bring a taste of Rome home.”
The new culinary venture comes after an illustrious career for Lombardozzi, who has worked with a bevy of culinary titans, including Giorgia Locatelli and Alain Ducasse. But, perhaps, the grit that will be instilled into the Bottega Salaria menu comes from Lombardozzi’s time spent working at his family’s restaurant in Rome.
The website whets the palate with details about home-made pastas, sauces, Italian olive oil, imported cheeses, and a daily Italian tart. Beyond a menu to set the imagination afloat, Texas Hill Country appears to be in for a real treat.
Listed upcoming events boast of Italian cooking classes and movies under the stars.
“Bottega Salaria takes its name from Via Salaria, the ancient Roman road that once carried salt from the Adriatic Sea to the Eternal City,” a recent Bottega Salaria Instagram post explains.
“Along its path, travelers, shepherds, and merchants exchanged flavors, stories, and traditions, quietly laying the foundations of Roman gastronomy.”
Although no official opening or grand opening date has been announced just yet, you’re sure to hear about this opening once the doors at 312 E. Austin St. in Fredericksburg swing open this winter.
