Dillas, the beloved and growing Plano-based eatery, is embarking on debuting the concept in San Antonio. Dillas is anticipated to open its first San Antonio restaurant this year as part of its 2026 expansion, according to Culture Map.
“Dillas has been a dream in the making for many, many years,” founder Kyle Gordon wrote on the brand’s website.
“It started out as an idea in college that was fun to just think about, but all the stars aligned and made Dillas a reality! The hard work, sweat, and tears are all worth it in the end.”
Gordon founded the brand with partner and entrepreneur Maggie Gordon in 2013. What Now San Antonio reached out to Gordon, but did not hear back by the time of this publication.
With a focus on premium, customizable quesadillas, Dillas grew from a college idea into a thriving chain serving several areas in Texas and Louisiana. There are now more than ten Dillas across North Texas and Louisiana. All with the same iconic name, drawn from a line from the movie, Napoleon Dynamite.
“One night while brainstorming names (Quesadilla King, Dilla Villa, The Fold Over, etc), I think at one point we had 60 names on the table), the movie Napoleon Dynamite, a classic and huge hit at the time, came on,” the Dillas website reads.
“At one point, there is a scene where Napoleon is hungry and asks his grandma, “What’s there to eat?” She responds, “Knock it off, Napoleon, make yourself a dang quesa-DILLA!” As we looked at each other, we all knew that we had the name. Dillas (Pronounced Dill-uhs) was the perfect name.”
Now to find the perfect spot to debut Dillas in San Antonio. The expansion is indeed planned for 2026, but the Gordons are still looking for the best place to open. Kyle shared with Culture Map that after attending the University of Texas San Antonio for a year, the 1-10 and 1604 remain a sweet area for him. So keep your eyes and ears open about developments and construction projects in the area.
