A new Einstein Bros Bagels is coming to Hays County! According to a recently filed permit, the Einstein Bros Bagels to come to San Marcos will open doors at 135 Northgate Rd, BLDG 1, STE 100 in the summer of 2026.

What Now San Antonio reached out to the Texas Director of Operations at Bagel Brands, Roger Adams, who confirmed that the new bagel spot will start construction in March but will likely wrap up construction before the listed July 30, 2026 date. Adams shared that the location will likely open a bit before in June 2026.

The Hays County project will cost approximately $350,000 to finish out the existing leased space. But other than that, there should be no big changes to what the bagel brand will offer, according to Adams.

Einstein Bros Bagels has become widely known and loved throughout the world for its unique bagel offerings featuring everything from blueberry to cheddar jalapeno. In the 1990s, the company bought out several retail bagel chains from regions around the US that lacked bagel traditions. After filing for bankruptcy in 2000, the company was bought out by New World Coffee. It became part of Panera Brands in August 2021. The brand started in 1995 in Miami. There are now more than 700 Einstein Bros locations across the country.

As Bagel Brands, the brand behind the operation, continues to grow its footprint across the state you’re sure to see more Einstein Bros Bagels pop up throughout the country.

For now, keep your eyes open for the new Einstein Bros Bagels coming to San Marcos at 135 Northgate Rd, BLDG 1, STE 100 in the summer of 2026.
