El Pastor Es Mi Señor is opening its next location in Stone Oak, according to co-owners and siblings Brenda and Alex Sarmiento.

El Pastor Es Mi Señor is bringing its widely loved trompo tacos al pastor to Stone Oak. According to Culture Map, the San Antonio taquería is set to open a new location at 19211 Huebner Rd. This will be the second location for the growing taco spot.

At the helm of the eateries are siblings and co-owners Alex and Brenda SarimentoWhat Now San Antonio spoke with the two about the upcoming opening expected to hit Stone Oak this spring.

“Stone Oak felt like the right next step,” Alex said via email.

“We have had strong support from that area for years, and many of our customers live nearby. It is a growing community that appreciates quality food, and we wanted to bring them something special without having to drive across town.”

The Sarimentos opened the first El Pastor Es Mi Señor in 2020, just four days before the COVID-19 lockdowns.

Since then, the taco brand has garnered quite a following and praise. The eatery received a James Beard semifinalist nod for Best Chef: Texas in 2025.

“We want to bring pride. Pride in our culture, pride in craft, and pride in doing things the right way. San Antonio deserves taquerías that honor tradition while pushing quality forward,” Alex said.

The brand is part of the family-owned restaurant group, Chilango Gringos, which also operates Japamex and Pinkfish.

“El Pastor Es Mi Señor is a chef-driven taquería centered around trompo-style tacos al pastor,” Alex said.

“It is rooted in tradition but elevated through technique, quality ingredients, and presentation. We take something that feels simple and make it unforgettable. It is bold, unapologetic, and very CDMX.”

The extensive menu includes a variety of traditional dishes like arabeskesadiyota, and alambre, as well as tortas, burritos, and tacos.

“Our signature trompo tacos al pastor are the heart of the menu,” Alex said.

“Carved fresh, with pineapple, cilantro, onion, and house salsas. We also feature sirloin tacos from the trompo, gringas, tortas, volcanes, and rotating specials. Everything revolves around flavor, balance, and freshness.”

As excitement mounts about the impending second location and we draw closer to its opening, we’re sure more details about the grand opening will be announced.

“This is more than a restaurant. It is a statement,” Alex said.

“We are grateful for the community support and excited to serve Stone Oak. Come hungry. The trompo is spinning, and we are just getting started.”
