According to a recent Facebook post, local catering business Potbelli BBQ is opening its first brick-and-mortar location in San Antonio.
“Food establishment permit. Got it!! Getting ready for the grand opening of Potbelli BBQ on the 22nd of July!!! 3363 East Commerce, Suite 102, San Antonio Texas 78219, open from 11:00 am to 7:00 p.m. or until sold out,” the caption reads.
Its upcoming position on East Commerce will place the eatery near establishments such as the uniform store Alsco Uniforms, Texas Burger Company, and the gym The Farmhouse.
The concept’s owner, Terrence Russell, tells What Now San Antonio a little about the dining concept: “Potbelli BBQ first started out as a record label founded by my uncle in the ’80s, Potbelly Media Group. I transitioned to doing BBQ just out of fun during COVID.” Russell adds that he started the business when he was working in sales and catering on the weekends.
When asked what locals can expect to find on the menu, he shares that in addition to traditional BBQ items, such as their best-selling item, their brisket, the menu will also include some less expected offerings.
“We’re going to be doing some special menu items like alligator sausage and crawfish sausage. We’ll have houdan stuffed cornish game hens. We’ll also occasionally offer smoked meatloaf.”
Starting out, the business will only be open on Mondays and Tuesdays. Russel believes most customers will be ordering to-go, however, the dining room will offer seating for between 20 and 25 people.
“It’s going to be old school style, BBQ served on butcher paper, all sold by the pound, and sides by the pint or quart,” he concludes.
