Max & Louie’s New York Diner continues to unfold its beautiful story of family and good eats in Texas with the opening of a second location in Cibolo in March of 2026.
According to project details filed with the Texas Department of Licensing and Regulation, which the San Antonio Business Journal recently reported on, the second installment of San Antonio’s premier New York-style diner will sit at 18152 Interstate Highway 35. Joining the likes of Parry’s Pizzeria, Taphouse, and more in the 116-acre mixed-use development along I-13, Cibolo Crossing.
“Cibolo is one of the fastest-growing cities in Texas, and the community needs more dining-out options. Max & Louie’s New York Diner will offer delicious choices for guests of all ages,” said founder Drew Glick.
In a conversation with What Now San Antonio, Glick confirmed that the new 8,ooo square-foot space will have the same “fanatical hospitality” as its flagship location in Bitters, TX.
Max & Louie’s New York Diner was first introduced to Texas in September 2016. Living in the Embassy Oaks Shopping Center, the beloved diner quickly grew from its 125-seat space to be able to seat about 300 people, expanding as more space became available in the shopping center.
Glick founded Max & Louie’s as an homage to his grandfather, Louie Glick, and great-uncle, Max Braerman, who immigrated to the United States from Russia and became successful businessmen in the meat industry, according to the eatery’s website.
“These two men represent the strong history of America’s immigrant roots, and the traditional foods that have nourished our bodies and fed our souls for generations,” the website reads.
In 2024, Max & Louie’s expanded, opening the latest member of the Max & Louie’s family business, Melvins’ home-made ice cream and espresso shop, right next door to the flagship location. Melvin is Louie’s son and Glick’s father.
The new Cibolo location, like its original counterpart, will seat about 300 people. It’s currently being built from the ground up, to the glee of Glick.
“It will feature the same family-focused menu and fanatical hospitality you’ve come to expect from us every day,” Glick said.
You can expect the same breakfast, brunch, lunch, and dinner offerings, including a host of omelets, waffles, Italian Entrees, Cold New York Deli Sandwiches, and more.
Max & Louie’s New York Diner will also hold a hiring campaign in support of the Cibolo community it aspires to serve. You can find out more details on the restaurant’s website and social media pages. Construction on the new diner is expected to wrap in March 2026 with a grand opening to follow.
