According to a recently submitted construction permit application, CAVA — a national Mediterranean fast-casual restaurant chain — plans to debut its first location in Schertz.

Coming to 36 Cibolo Valley Drive, the eatery will land near establishments such as Dunkin’, Parry’s Pizzeria & Taphouse, and Willie’s Grill & Icehouse.

For readers who are unfamiliar with the chain, its website offers a brief introduction: “CAVA’s inspiration is rooted in the entire Mediterranean meal experience, notably that feeling-so-cared-for genuine expression of hospitality and warmth.”

The concept was founded by Chef Dimitri Moshovitis, Brett Schulman, and Ted Xenohristos in 2010 and currently boasts over 350 locations across the United States.

According to the filing improvements to the existing 2,500-square-foot spot are scheduled to begin on June 26 and finish on September 12. For an estimated $850,000, the project will be carried out by New Orleans-based firm Ferris + Sloane.

An opening date has not been announced yet, so stay tuned for updates.
