According to a recently submitted permit application, Merit Coffee at 700 E. Sonterra Boulevard, Suite 113, in San Antonio — near eateries such as First Watch, Nothing Bundt Cakes, and Smashin Crab — plans to undergo renovations.
What Now San Antonio reached out to the concept’s CEO, Bill Ellis, to inquire about the updates, but he could not provide additional information before the time of publication.
Nevertheless, the filing discloses that renovations to the 1,600-square-foot space are slated to begin on August 1 and be completed by the end of September. For an estimated $393,000, local firm Insite Design & Planning, Inc. will carry out the project.
For readers who are unfamiliar with Merit Coffee, the business offers an introduction on its website: “Since 2009, we have created beautiful community spaces where you can enjoy that coffee, get some work done, connect with friends, or even escape the busyness of life. Our cafes focus on the local community and neighborhoods they are in.”
“Our team travels to Central/South America and Africa to find the best quality coffee and work directly with the farmers. The coffee we source is shipped to Texas, where it is roasted on a 25 & 45kg Probat roaster, custom-built for us in Germany,” the statement continues.
