Nineteen Hyaku, a new sushi bar concept, is making its way to 1900 Broadway, San Antonio this October. The restaurant, opening inside the Jefferson Tower, will boast 5,000 sq. ft and feature Japanese cuisine, including specialty sake.

“We wanted to marry Japanese cuisine with Western hospitality,” says Houston Carpenter, co-owner of the husband-and-wife Carpenter Carpenter Hospitality.

The sushi bar will be the parent company’s fifth endeavour inside the restaurant business in just three years – previous concepts include Little Em’s Oyster Bar and Upscale, another sushi experience.

Upscale’s lead chef, Ruben Pantaleon, has been working closely with the owners to develop Nineteen Hyaku’s menu for the past year.

Carpenter says he’s most excited about having a solid fuel grill that will be using Japanese coal to provide Nineteen Hyaku’s customers with authentic wagyu and other meat flavors.

“We’re excited to be in such a modern, new tower on Broadway,” Carpenter says. “And to have a largest corner unit on the ground floor is a big plus.”
