New Waterloo and MaieB Are Teaming up to Debut a New Dining Concept in Fredericksburg

The Albert Hotel — an upcoming “honest Hill Country getaway” backed by New Waterloo and MaieB hospitality companies — plans to debut in Fredericksburg. 

Coming to 213 East Austin Street, the inn will land near establishments such as Kaffee Haus, Sage Restaurant & Lounge, and Vaudeville.

In addition to “110 guest rooms, a sunken pool, a full-service spa, [and] event spaces,” the retreat will boast three restaurants and two bars, according to Austin Eater  — one of which is “The Restaurant at Albert: A gourmet Hill Country dining experience, helmed by our friend + partner Chef Michael Fojtasek,” as described in a New Waterloo Instagram post.

“Open daily for breakfast, lunch, and dinner, the Restaurant at Albert Hotel will focus on seasonal dishes inspired by the Texas Hill Country such as spring salad, lamb rack with horseradish, and spaetzle. Its wine list will feature a wide range of local and international bottles,” Eater shares.

What Now San Antonio reached out to MaieB to inquire about the concept, but a representative could not provide additional information before publication.

An opening date has not been announced yet, so stay tuned for updates.
