Pan & Coffee Bakery Debuting New Outpost in San Antonio

According to a recently submitted permit application, local concept Pan & Coffee Bakery is gearing up to debut a new outpost in San Antonio, coming to 27503 IH-10 W.

The eatery’s co-owner, Eric Lawitz, tells What Now San Antonio, “This is an international bakery, coffeehouse, and restaurant… We pride ourselves on being international, combining the best of Mexico and the USA into one restaurant.”

For readers who are unfamiliar with Pan & Coffee Bakery, the flagship spot opened four years ago on Stone Oak Parkway. “Everything is baked in-house,” Lawitz shares — “I think the thing people like the most about us is that we have a high-level bakery.”

Additionally, the filing reveals that construction of the ground-up 4,000-square-foot restaurant plus a 900-square-foot patio is scheduled to begin on March 1 and finish on July 31. Luna Architecture will carry out the project for an estimated $1,900,000.

After opening at the end of 2025, the coffee shop will offer brioche bread, croissants, and Mexican conchas, as well as spinach quiche, breakfast plates, and lunch sandwiches.
