According to MySA, the local cafe and coffee business Pan & Coffee is expanding its San Antonio area presence. The Journal reports that the concept is planning to begin building a new outpost in Boerne later this summer.
Coming to 27495 Interstate-10 West, the cafe will soon be neighbored by establishments such as the car dealership Lamborghini San Antonio, Mission City Church, and Vista Dermatology.
The eatery’s co-owner, Eric Lawitz, tells What Now San Antonio, “This is an international bakery, coffeehouse, and restaurant… We pride ourselves on being international, combining the best of Mexico and the USA into one restaurant.”
For readers who are unfamiliar with Pan & Coffee Bakery, the flagship spot opened in 2021 on Stone Oak Parkway. “Everything is baked in-house,” Lawitz shares — “I think the thing people like the most about us is that we have a high-level bakery.”
Additionally, the Journal reports that the upcoming spot will offer locals “a technology-assisted drive-thru, a contemporary dining setting, and the same daily offerings of freshly baked sweet breads.” Construction is slated to begin within the next two to four weeks, and the restaurant is scheduled to open in mid-2026.
After opening, the coffee shop will offer brioche bread, croissants, and Mexican conchas, as well as spinach quiche, breakfast plates, and lunch sandwiches.
