Pan Dulce, a Modern Mexican Kitchen, to Debut in San Antonio in Redland Plaza

Owner shares an exclusive announcement about the new concept that's set to debut in Spring of 2026.

Pan Dulce sounds just as sweet and savory as it’s intended to be once the concept comes to life in Redland Plaza next year. According to a permit registered this week with the Texas Department of Licensing and Regulation, construction on the 2919 N Loop 1604 E location in Building 2 of the Redland Plaza is expected to start this November and be completed by spring 2026.

Michael Bravo, the President and CEO of local franchise group Brame Brands, is the owner of the new traditional Mexican kitchen with a modern twist. Bravo wasn’t available for an interview, but his Vice President of Operations and Brame Brands partner, Brad Peak, spoke with What Now San Antonio about launching the new culinary endeavor.

“Michael has always wanted to have his own concepts,” Peak said.

“We’re going to have a lot of traditional and classic Mexican dishes, but we’re going to kind of elevate ‘em to a more modern look.”

Peak confirmed the Redland location will open doors in March of 2026 and shared an exclusive announcement with What Now San Antonio. Pan Dulce’s Redland inauguration will be the beginning of what may set out to be a chain of specialized old-school Mexican bakeries and restaurants.

Peak shared that he and Bravo intend to open a second Pan Dulce at TPC Parkway by the JW Marriott in April of next year.

The Redland Plaza location is going to be nearly 4,000 square feet and will serve breakfast, lunch, and dinner. Menu items will include items like traditional chilaquiles plates, breakfast bowls, and avocado toast. Peak shared that the two also plan to have certified Angus beef for fajitas and street tacos.

One thousand square feet of the Stone Oak area space will go towards the bakery. Brovo has hired a chef from Monterey, Mexico, taking the level of authenticity up a notch.

“We will be making our own Pan dulce there,” Peak said. “He’s going to be our Pan dulce extraordinaire in San Antonio.”

While Peak was born in Napel, Illinois, and has lived in the Alamo City since he was six months old, Bravo hails from Mexico City and has been living in San Antonio for nearly a decade. The two have been working in franchises for multiple years-Peak for 20, Bravo for 3-and decided to band together to create something special, providing San Antonio with the nearly perfect balance of Mex-Tex to bloom Pan Dulce.

The Redland Plaza location also has a lot to offer the new eatery. The Mexican-inspired pastry shop and dining destination will sit on the front of the road at the intersection of multiple mega churches.

“It’s just such a perfect corridor to get our brand out there,” Peak said.

The TPC location that will open shortly after the inception of the concept comes to fruition, will sit in the neighborhood in back of the JW Marriott and will be 3,000 square feet with a mini bakery and a drive-thru.

“All the Pan dulce will be fresh,” Peak shared. “You’ll be able to go through the drive-thru and get yourself a couple of street tacos, a couple of conchas, and be on your way.”

Construction for Pan Dulce at Redlands Plaza is expected to be underway next month. If all goes well, the smell of freshly baked bread floating throughout the Stone Oak area may lead you to this modern Mexican eatery come March of next year.
