Potbelly Sandwich Works is set to open a new Greater San Antonio region shop this Spring. According to a state permit, the new Potbelly is set to open in the New Braunfels’ Town Center at Creekside in 323 Creekside Crossing, Suite 105. The permit details that construction is slated to wrap up in April 2026.
The new Potbelly opening comes to an already bustling hub for entertainment and dining. The sandwich chain will open its new locations at the Town Center alongside competitor, Portillo’s. But Potbelly has been on a roll and continues to grow.
Potbelly actually began as an antique shop in Chicago’s Lincoln Park back in the ’70s. Owner Peter Hastings began making toasted sandwiches to attract customers to his shop. In 1996, entrepreneur Bryant Keil bought the concept and expanded it from one location to a national chain.
By 2005, Potbelly Sandwich Works had grown to a hundred locations, expanded beyond Chicago in 2008, and opened its first international location in Dubai in 2011. In 2025, the brand was acquired by convenience store and gas station chain, RaceTrac, and continued to grow and franchise. There are now nearly 500 Potbelly Sandwich Works locations, with approximately 63 of those stores in Texas, but less than a handful in the Greater San Antonio area.
Potbelly franchisee, Dora Braun, is helping change that by opening the new Potbelly to come to the Town Center at Creekside. What Now San Antonio reached out to Braun and RaceTrac CEO and chairman of the board, Natalie Morhous, for more details about the opening, but did not hear back by the time of this publication.
The Chicago-based sandwich brand is expected to bring its franchiseable menu, which features a variety of sandwiches, soups, and salads, to Town Center at Creekside when the new location opens.
