According to a recently submitted permit application, the highly-regarded, Driftwood-based barbecue joint Salt Lick BBQ plans to debut its first outpost in Fredericksburg.
Coming to The Sycamore — a venue by LB Development underway at the intersection of Highway 290 & Luckenbach Road — the eatery will be neighbored by establishments such as the winery Blumenthal Farms, Messina Hof Hill Country Winery, and the orchard Studebaker Farm Peaches.
Salt Lick’s owner, Scott Roberts, tells What Now San Antonio that the developer approached the barbecue business and that, considering Fredericksburg’s proximity to San Antonio, the business agreed. He shares that he looks forward to pairing Texas wine with Salt Lick’s award-winning Texas BBQ.
In addition to debuting a Salt Lick BBQ at the locale, Roberts will also introduce a Salt Lick Cellars location (the first outside of Driftwood) that will feature a wine bar, a wood-fired oven, and a selection of homemade menu items. Additionally, he will debut a third, brand-new concept, Sombra, in partnership with Chef Diego Gonzales of the restaurant Los Azulejos in San Antonio.
For readers who are unfamiliar with Salt Lick BBQ, Roberts offers What Now San Antonio a glimpse into the barbecue business’s beginnings, sharing that the first location in Driftwood was constructed around a pit that he and his father built using stones and sand collected nearby. After opening for official business in 1967, they expanded the restaurant eight times, and have gone from operating out of a simple structure to being able to host around 800 customers, and live music on the weekends.
“He didn’t want you to wait in line, and he didn’t want you to run out of food,” Roberts shares about his father. He says that he hopes to continue his legacy and continue honoring the idea of being “Hill Country friendly.”
Per the filing, construction of the 9,323-square-foot restaurant will begin on September 1 and should be completed by October 2026.
