Scooter’s Coffee is coming to the greater San Antonio area thanks to a Boerne family. Shaughnessy and Andrew Davis are working toward opening an edition of the coffee chain at 31500 I-10 Frontage Road in February of 2026.
Permitting documents show that construction is slated to start in February of next year, but Shaughnessy told What Now San Antonio that she’s hoping to break ground much sooner than that.
“We’re excited to be getting a little closer to opening,” Davis said.
After opening their first Scooter’s Coffee in Kerrville in June of 2023, the couple decided on bringing their enthusiasim for the brand to their home in Boerne.
“The area does not have a ton of quick-service restaurants or concepts and so we thought there would be a need in that area,” Davis said.
And quick service is what the Davis’ Scooter’s Coffee in Kerville has been all about.
“We are really focused on our customer service and how fast we get our drinks into our customer’s hands and get them on their next part of the day,” Davis said.
“At our Kerville location, we average about a minute and a half from the time you place your order to the time you leave our window.”
Shaughnessy first fell in love with the brand around the time she first fell in love with Andrew. Andrew was born and raised in Nebreaska where Scooter’s Coffee was founded and the two met. The now married couple still love the taste, smell, and feeling of Scooter’s Coffee and they aspire to bring that same feeling to each customer that stops by their new location in Boerne.
“We’re just excited to open up a business here and really to serve our customers and to give back to our community,” Shaughnessy said.
The Davis family will follow the Scooter’s menu at this new location as they did in Kerville, offfering classics like the Caramelicious, really great infusions that use red bull and great blended drinks including espressos and smoothies.
In addition to providing quick hot drinks to the community, the couple intends to give back to the community in more ways than one. The Davis family has become an intergral part of the Kerville community, giving proceeds to students and teachers, and hosting fun events and activites. The plan is to do the same at the new Scooter’s Coffee when it opens in Boerne in February of 2026.
