The Toasted Yolk to Open a New Location in the Shops at Brick and Mortar District

The Toasted Yolk is coming to the new retail center this Summer thanks to a franchisee husband and wife duo.

The Toasted Yolk, the brunch brand that wants to “change the way you think about breakfast and lunch,” is embarking on yet another Texas opening, this time in Kyle. According to a recently filed state permit, the booming breakfast chain is set to open in the new Shops at Brick and Mortar District at 150 Heroes Memorial Drive, Suite D-100.

Construction on The Toasted Yolk, which is planned to open at the Shops at Brick and Mortar District, is slated to start at the end of this month and wrap up by the end of April 2026.

The franchisee power couple behind the opening is John and Miriam Diaz, who run a Great Clips location in Houston. What Now San Antonio spoke with John to find out more details about the opening.

“We love the brand so much, and we’re just trying to, basically, bring a piece of Houston over to central Texas,” John said. 

“After going to visit multiple times, we just fell in love with the community, even to the point where we are possibly going to start renting a place over there soon.” 

The new eatery will live in the new retail center, “Shops at Brick and Mortar District”, anchored by Sprouts Farmers Market. The 42,000-square-foot center has a host of shops planned, including The Toasted Yolk.

The Yolk was founded in Houston by Chris Milton and Mathew DeMottWhat Now San Antonio reached out to the founders to chat about the brand’s expansion, but did not hear back by the time of this publication.

“Chris Milton and Mathew DeMott opened the first Toasted Yolk Café in 2010. The mission was to provide a unique breakfast and lunch experience,” The Toasted Yolk website reads.

In 2016, the brand began franchising, with the first franchised location opening in 2018. There are now nearly 50 Toasted Yolk locations across several states, primarily in Texas and Florida, with many more in development.

“I have many fond memories at the Toasted Yolk, especially with my family,” John said.

“After church on Sundays, we would always go to our local Toasted Yolk and just enjoy our family time together. We get some of our Arnold sandwiches and eat them up in there. Even on game days, we would go there and enjoy a couple of mimosas and whatnot and just enjoy ourselves. We’ve celebrated family gatherings, we’ve celebrated birthdays, we’ve celebrated plenty of things there.”

After traveling to Minneapolis for their Great Clips franchise, the Diaz couple was looking to embark on another investment that would keep the Houston natives closer to home. The Toasted Yolk was an exciting opportunity for the Diaz duo to jump into.

Lover of many things at The Toasted Yolk, John shared that is favorite item on the menu is the Arnold. And yes, that means the many versions the brand cooks up and dishes out.

“There are many versions of our Arnolds. My wife will probably say something different. But I go with the Southwest Arnold. Every single time when I go in there, that’s what I’m ordering, no matter what,” John said. 

The Toasted Yolk has an extensive breakfast, brunch, and lunch menu with enough drink options to wash it down. As for the Arnolds, which is a breakfast sandwich served with a choice of grits or hash brown casserole, there’s a multitude to choose from, including the Southern Fried Arnold, the Classic Arnold, and the West Coast Arnold.

The Toasted Yolk even has memorable desserts.

“We’ve got these churro donuts, if you have a sweet tooth, you’ll love,” John said.
