Wilhelm & Werner has been announced as the newest dining addition to come to The Faust Hotel. Revonvations at the historic hotel are currently underway and expected to wrap in Spring 2026, when Wilhem & Werner will also make its grand debut at 240 S. Seguin Ave. in New Braunfels.
Lark Hospitality is at the helm of the new dining experience that will open alongside a speakeasy called Walter’s that’ll live in the basement below the new eatery and the Prince Solms Lobby Bar, which will service the Magnolia Patio. What Now San Antonio reached out to Lark Hospitality about the New Braunfels hotel addition and was told that Scot Hopps is set to oversee operations at the hotel and restaurant, with Chef Jesse Souza leading the kitchen. What Now San Antonio then reached out to Souza and Hopps for more details, but did not hear back by the time of this publication.

The historic Faust Hotel opened as the Travelers Hotel in 1929. The Faust Hotel was built by locals to boost tourism during the Depression, designed by Harvey Smith in Spanish Renaissance style, and later renamed after its owner, Walter Faust.
Community Impact reports that the hotel closed for renovations last November, and the new Wilhelm & Werner restaurant that’s set to open when The Faust Hotel reopens will operate as a Texas Brasserie with European influences. Guests can expect a dining space and bar with the ability to seat 130.
Wilhelm & Werner is expected to make its debut when The Faust Hotel reopens at 240 S. Seguin Ave in Spring 2026.
