Timothy Parker is hoping to expand Chula Vista Brewery, along with its menu, by venturing into barbecue. The new brewhouse will open at 851 Showroom Pl. in Chula Vista this coming spring.
The Navy veteran was propelled into brewing while trying beer around the world. He has run with the new career ever since retiring from service in 2019.
“Right now, we have a five-barrel brewhouse in Chula Vista,” Parker said. “But this new place will have a lot more. I don’t even have a menu right now, so this will be a pretty big move for us.”
With 6,400 square feet indoors and an additional 1,500 square feet patio area outdoors, the new space will offer much more room for production. Like many other brewhouses in California, Chula Vista Brewery has recently leaned into the to-go format, selling more growlers and cans. According to their Facebook page, they also offer delivery.
“San Diego is such a craft brew capital, it just makes sense to keep growing our business here,” Parker said. “And it will be great to have a patio space, especially nowadays.”
While Parker has yet to lock down an opening date, they predict to have the new space ready this spring.
