EggBred, a fast-casual breakfast and brunch concept specializing in scratch-made breakfast sandwiches, is preparing to open a new location in San Diego at 2800 El Cajon Boulevard.
The upcoming location in North Park will be operated by franchisee David Roberts, who tells What Now San Diego that the team is targeting an April 2026 opening, pending permit approvals. Roberts also shared plans to open a second San Diego location sometime in 2027. Customers can expect EggBred’s signature menu of made-from-scratch sandwiches, house-made sauces, and all-day breakfast staples.
Founded in 2020 by Albert Shim, EggBred launched its first store in La Habra, California, and has since expanded to more than a dozen locations nationwide. The brand was created as a fast-casual alternative to traditional breakfast fare, focusing on quality, consistency, and locally sourced ingredients. The San Diego location marks the company’s second in the county, following its San Marcos store.
EggBred emphasizes a “from scratch” approach, offering fresh-cracked eggs, proprietary protein blends, and baked-in-house cheddar biscuits. The brand sources milk buns and English muffins from nearby artisan bakeries and makes its sauces in-house daily. Breakfast is available all day, with a lunch menu offered during weekday afternoons.
The restaurant’s tagline, “Different yolks for different folks,” reflects its commitment to variety and personalization. Customers will find a mix of traditional and modern breakfast staples alongside cold-pressed juices, brewed coffee, and kids’ options. EggBred’s locations are open seven days a week from 7 AM to 2 PM.
