Encinitas Brewing Company, a brewery, distillery, and restaurant concept, is getting ready to open in Encinitas at 1588 Leucadia Boulevard.
The new concept will move into the former home of Islands Restaurant in the Encinitas Ranch shopping center, according to a liquor license application. Co-owner Ryan Van Biene tells What Now San Diego that the project was recently approved by the planning commission, and construction is expected to take about five months once it begins. While an official opening date has not been set, the team is targeting a September launch, though the timeline is still fluid.
The space will occupy roughly 5,500 square feet inside the existing building, with plans to expand the outdoor patio to about 1,565 square feet. The team has applied for a Type 23 Small Beer Manufacturer license, a Type 06 still license, and a Type 74 Craft Distiller license, setting the stage for both in-house beer and spirits production.
The new concept, which is also co-owned by Brian McBride, will feature an expanded 1,565-square-foot patio for outdoor seating, according to Planning Commission Hearing Notices from the city of Encinitas. The Encinitas Ranch shopping center offers accessibility and visibility for locals and visitors, providing a strong landing space for the brewery and distillery.
Customers can expect a menu featuring locally inspired dishes, small-batch spirits, and a variety of craft beer selections. The combination of brewery, distillery, and restaurant is designed to create a community-focused gathering spot for Encinitas residents.
