Koobrew, a new craft beverage company led by industry veteran Koo Miyake, is preparing to open a tasting room in San Diego at 9030 Kenamar Drive, Suite 308, within the Brewery Igniter campus in Miramar.
The company’s first location will take over the 1,700-square-foot space formerly home to Kové, and before that, Amplified Ale Works, according to SD Beer News. While an exact date has not been announced, Miyake tells What Now San Diego that the tasting room is expected to have its soft opening to the public by mid-to-late October 2025. Customers can expect a range of beverages rooted in creativity and artisanal values, including beer, botanical spritzers, and functional offerings. Koobrew will open next door to Pure Project Brewing, which has operated out of the adjacent suite since 2015.
Miyake brings years of experience in the beverage industry to the new venture. His background includes roles in brewing and distilling at companies such as Mikkeller Tokyo, Boochcraft, Cutwater Spirits, and Kové, where he most recently led research and development. Koobrew represents the next step in his career, combining technical knowledge with a focus on authenticity and innovation. Miyake tells What Now San Diego that he is bringing this project to life all by himself.
The beverage lineup will include lagers, IPAs, Belgian-style ales, and a unique category of fermented botanical teas known as “functional spritzers.” These blends are crafted with wine yeast and infused with herbs, spices, and fruit, designed to be flavorful while aligning with better-for-you principles. The brand’s mission emphasizes thoughtfulness in both its products and experiences. There will be no food available for purchase, but this may change in the future, according to Miyake.
Inspired by San Diego’s surf culture and Japan’s craftsmanship, Koobrew also aims to be a creative community hub. Plans for the space include collaborations with local artists on décor, label art, and merchandise, including custom-designed brewer’s workwear. Interior design elements will feature wood and linen textures, coastal tones, and Japanese symbolism.
