New Bar to Specialize in Noble Rot Wines and Small Bites

South Park will soon welcome Noble Rot to the neighborhood. According to a recent ABC filing, the wine bar will join neighbors Piacere Mio and Seven Seas Roasting Company on Fern Street.

Co-owners Michael and Andrea Marx took inspiration for Noble Rot from visiting wine bars in the UK and loving the atmosphere. Michael Marx tells What Now San Diego, “We wanted to go with more of a tavern feel but not quite as dingy and without the stuffiness of a tasting room. A mix between a tavern and a coffee shop, someplace where you feel comfortable relaxing.” Marx explains they’re still working out the intricacies of their alcohol license to combine their ideal wine bar experience with the family-friendly vibe of South Park. 

Specializing in noble rot wines (a wine term for a type of grape fungus), guests can explore their wide selection of styles served on tap via digital wine dispensers. On the food menu, their focus will be on charcuterie boards and flatbreads.
