NOIR Sushi and Sake Fusion Lounge, a brand new elevated Japanese dining concept, is opening a new location in San Diego’s Gaslamp District at 926 Fifth Avenue.
The new restaurant concept will open the former home of Full Moon Sushi & Kitchen Bar, according to a recent liquor license application. Owner MJ Ko tells what Now San Diego that he hopes to open NOIR Sushi sometime in September 2025. The new restaurant will blend traditional sushi craftsmanship with modern flavors to create a refined take on Japanese cuisine. When it opens, customers can expect high-end sushi, a selection of nice sake, and sake flights.
The menu will feature a chef-driven omakase experience, a selection of elevated small plates, and a curated sake program with tasting flights and premium pairings. Designed for both dedicated sushi enthusiasts and upscale diners, the concept aims to bring a new level of sophistication to the area.
