Rosemarie’s Buns & Brews, a San Diego-based burger restaurant known for its premium sliders and bold flavors, is getting ready to open in Encinitas at 608 South Coast Highway 101.

The company’s third brick-and-mortar shop is expected to open in a shared space with Gelati & Peccati on November 1, according to San Diego Magazine. While the concept originated as a food truck outside Harland Brewing, owner and chef Nick Balsamo has steadily expanded the brand across coastal neighborhoods. Guests can expect Rosemarie’s signature lineup of Wagyu beef sliders, fried chicken sandwiches, and creative sides like blue cheese bacon fries.

Founded by Balsamo in 2023, Rosemarie’s Buns & Brews first opened in Mission Beach, followed by a second unit in Ocean Beach in 2024. Named after Balsamo’s Sicilian grandmother, the business blends culinary ambition with community-minded values. The Encinitas expansion is a collaboration with Matteo Cattaneo and Giovanni Bonomi, the duo behind Gelati & Peccati. Both teams plan future joint ventures under the same roof.

The brand’s mission is rooted in slow, intentional growth with an emphasis on local engagement. Previous efforts include beach cleanups, school fundraisers, and neighborhood pop-ups. A new round of events is scheduled for early 2026 as part of the company’s ongoing outreach strategy.

Menu highlights include the award-winning RosieMac, featuring Wagyu patties, onion confit, and Kewpie mayo; the Little Munchies chicken slider with wildflower honey buffalo sauce; and the Round Up, which includes bacon crumble, an onion ring, and house-made barbecue. Guests can also order seafood sliders, such as the Captain Jack, featuring wild shrimp, or the Cajun Softshell Crab, served with lemon aioli and Old Bay slaw.
