When Ksenia Nesterova moved from Russia to the U.S., she began making smoked fish because nobody else was.
“Smoked food is very popular in my home country, Russia,” Nesterova told What Now San Diego. “I am a big fan of smoked fish myself and I missed this type of food so much. One day I decided to try to smoke some fish. It was so good! I continued experimenting with different types of food and recipes.”
At this point, she has developed enough recipes to open a restaurant. This coming April, Nesterova plans to do just that, with her business Smoked. Cured. Tasty.
Smoked. Cured. Tasty. is the culmination of years of recipe development, as Nesterova has tested out countless flavors to share with family and friends. Once open, the menu will include smoked fish, meat and poultry to go along with sandwiches, bagels and charcuterie.
“Last year, I decided to move from passion to a new profession,” Nesterova said. “We started to look for a small restaurant in North County and we finally found one in Escondido.”
Her restaurant will open at 138 W Grand Ave. in the space formerly occupied by the Vegan Soup Bar, next door to Swami’s Escondido. Updates about Smoked. Cured. Tasty. can be found on the restaurant’s Instagram.
