Snake Oil Cocktail Company, a leading event beverage consulting firm specializing in large-event drink catering, is opening a new restaurant at 975 Waterfront Place, Unit 400, in downtown San Diego’s Bayfront district.

Earlier this week, the company filed a liquor license application to open a new bar and restaurant at Papa Doug Manchester’s incoming Manchester Pacific Gateway. The development is currently under construction across from the Navy Pier and is expected to open by the end of 2025. Once complete, the 12-acre Pacific Gateway project will have seven buildings, a public waterfront park, public art, plazas, cafes, entertainment venues, and more.

When it finally opens, the new full-service restaurant will undoubtedly find success. The yet-to-be-named restaurant will see plenty of guests coming from One Broadway Hotel & Plaza, a part of the overall development. Plans include 1,035 hotel rooms, a 1.9-acre plaza and cultural space, additional retail and dining options, entertainment, and approximately 3,000 below-grade parking spaces. While the exact details of the new restaurant have yet to be revealed, it is known that CEO Michael Esposito and Director of Mixology Frankie Thaheld will be at the helm of operations.

“This one-of-a-kind property transforms San Diego’s renowned port district into an iconic waterfront hotel that will immediately and globally enhance our region’s reputation as one of the world’s most desirable destinations,” according to the Manchester Pacific Gateway website. “Envisioned by Papa Doug Manchester, developer of the triple five-star Fairmont Grand Del Mar, Manchester Grand Hyatt, and the San Diego Marriott Marquis & Marina, the development is a gateway to San Diego’s booming upscale downtown and tourist economy. One Broadway Hotel & Plaza will be the place you want to be in America’s Finest City.”
