Taste Craft Eatery, a California-based mix-and-match restaurant known for its customizable menu, is preparing to open a new location in Carlsbad at 2668 Gateway Road, Suite 170.
The company’s third location is set to open at The Square at Bressi Ranch in a nearly 4,000-square-foot space with a large front patio, according to San Diego Magazine. Opening is planned for late Summer 2026, with initial hours scheduled from 11 a.m. to 10 p.m., seven days a week. While an exact grand opening date has not yet been announced, customers can expect the same build-your-own format that has defined the brand since its founding.
Taste Craft Eatery was opened in 2013 in San Luis Obispo by Gretchen LeMiere and her husband, Scott LeMiere. The concept centers on a mix-and-match menu that allows for more than 6.7 million possible combinations. Customers choose between a Duo, Trio, or Quartet option, selecting two items for $17, three for $22, or four for $32. The restaurant gained national attention in 2024 when it appeared on Diners, Drive-Ins and Dives, where Guy Fieri described the menu as “madness.”
There are currently two Taste locations operating in California. The original remains in San Luis Obispo, and a second restaurant opened in Paso Robles in 2020. The Paso Robles location is at 810 11th Street in downtown Paso Robles and serves lunch, dinner, and weekend brunch daily from 11 a.m.
Menu offerings include sliders, sandwiches, salads, customizable mac and cheese, and seasonal soups. Weekend brunch features mix-and-match eggs Benedict, French toast croissant bowls, and chilaquiles. The restaurants also serve craft beer, wine, and cocktails.
This will be an excellent landing space for Taste Craft Eatery, considering Bressi Ranch’s steady residential growth and its established retail and dining mix. The addition marks the brand’s first North County San Diego location as it continues to expand beyond San Luis Obispo County.
