The owners of The Peruvian Spot, a casual Peruvian restaurant in San Diego’s Linda Vista neighborhood, plan to open a second location centered on pollo a la brasa, Peru’s signature rotisserie chicken dish traditionally grilled over charcoal.
Silvana and Guillermo Carranza, the husband-and-wife team behind the restaurant, haven’t announced a location or opening date, but are hopeful for this new venture, according to San Diego Magazine. The couple opened The Peruvian Spot in January at 7510 Mesa College Drive, offering a range of traditional and modern Peruvian fare. Their second concept will specialize in pollo a la brasa, a cornerstone of Peruvian cuisine that is typically marinated in a blend of spices and cooked over open flames.
Silvana Carranza, a classically trained chef and pastry chef originally from Peru, has built a name for herself through her dessert business, La Cucina di Silvana, and as a winner of the Spanish-language cooking competition El Toque de Aarón. She and Guillermo launched The Peruvian Spot after identifying a lack of Peruvian food representation in San Diego.
The original location features counter-service dining and a menu that includes items like lomo saltado, tallarines verdes, and handmade alfajores cookies, in addition to Silvana’s well-known desserts. Since opening, the couple says they’ve been able to introduce the neighborhood to flavors many customers haven’t tried before.
While no official announcement has been made about the future pollo a la brasa-focused restaurant, the Carranzas’ move signals their intention to grow their brand and bring more Peruvian food offerings to the San Diego area.
