Tortilla Mia is expected to debut their new concept in Carlsbad Village soon. The Mexican restaurant will make a quick change of ownership swap to replace Las Olas Mexican Restaurant.
When What Now San Diego spoke with Co-Owner Mike Fraijo recently, he stated they were nearing a final close of escrow on the location. Las Olas operates another quick service beachside spot in Cardiff.
While few details are known about Tortilla Mia, their social media shares some clues as to what’s in store for guests. A full menu has yet to make it to their website but the restaurant promises dishes with fresh tortillas made in house.
To pair with their scratch-made dishes, they’ll offer a signature cocktail menu with infused margaritas.
Tortilla Mia is currently accepting applications to join their newly built team as they look to move into the Carlsbad location. While an update announcement has yet to be made about Tortilla Mia’s debut, their website shares a September 1st opening date. Follow on Instagram for more information.
