Los Reyes Restaurant serves Salvadoran and Mexican dishes in San Francisco. The report notes that the restaurant was found with many violations. They were:

  • The food safety manager certificate was found to have expired. The eatery is expected to obtain a state-approved food safety certification course within 60 days of operation or immediately when a food safety manager leaves the facility.
  • Cheese was left at room temperature on the counter for approximately three hours and measured 67°F (per person-in-charge), the report said.
  • Pupusa ingredients, including a cheese mixture and masa, were left at room temperature. They measured 76°F and 94°F. The facility was asked to label all PHF used under Time as a Public Health Control (TPHC) with the preparation date and discard time.
  • Improper warewashing procedures were observed. The first compartment was full of dirty dishes, the second had soap and water, and the third had sanitizing solution.
  • Utensils like knives and graters were stored in still water on the cook’s line, and a mold-like substance was seen inside the ice machine.
  • Dry goods like sugar and flour were observed uncovered when they were not in use.
Personal items like purses, coats, rubbing alcohol, super glue, burn gel, and perfume were kept in food preparation and storage areas

  • Quaternary ammonia test strips were not available for monitoring sanitizer concentrations during the inspection.
  • The service hood above the cook’s line needed a verification of maintenance. The restaurant is expected to provide approved exhaust hoods and submit documentation on official letterhead from a professional hood-cleaning service showing the most recent service date and the next scheduled service.
  • Personal items like purses, coats, rubbing alcohol, super glue, burn gel, and perfume were kept in food preparation and storage areas.

Follow-up Inspection

According to the report, the restaurant has been instructed to correct the violations noted ahead of the reinspection date. The follow-up is scheduled on or after February 19.
