Dumpling Bites was reported due to inadequate handwashing facilities at the premises. The soap dispenser was found to be inoperative, and the paper towels provided did not fit properly. Heavily soiled wiping cloths were identified on the prep surfaces.

A cockroach infestation was observed by the visiting inspectors at the facility. They found roaches around the hand-wash sink and water heater. The person in charge (PIC) had treated the prep area with pest control gel. The department mandates that any food facility prevent the entry and harborage of animals, birds, vermin, rodents, and insects by using approved methods.

There was no valid food safety certification available at Chaska Restaurant. The establishment should contact the department with food safety certification documentation.

Inspectors ordered the restaurant to stop storing perishable foods at room temperature and keep them chilled at 41°F or below, or hot at 135°F or above.

Food contact surfaces should be thoroughly cleaned and sanitized, ensuring proper readings of the solution. None of the sinks in the facility had running hot water. The temperature reading should be maintained at 120°F instead of 85°F.

The establishment is required to ensure protection from potential cross-contamination. The facility should segregate ready-to-eat foods and store them away from raw foods.

The inspectors found several raid roach cans throughout the venue. The staff was instructed to eliminate all the self-applied pesticides and contact a professional pest control contractor. Certain sections on the walls and behind the sink revealed accumulated debris. The report is available online.

Follow-up Inspection

Dumpling Bites should thoroughly sanitize the areas affected by cockroach infestation to resume operations. The facility should provide receipts and reports as proof of treatment completed by a licensed pest control operator for review.

The permit to operate at Chaska Restaurant will remain suspended until hot water is accessible to all sinks. The establishment should contact the provided email in the report when the water is measured at least 120°F.

Both facilities were immediately closed after inspection, and a closure notice was issued. The health permit is also suspended, meaning the restaurants are not allowed to handle food pending department approval. The establishments can resume business activities once all issues warranting the closure are corrected and permits are reinstated by the officials.
