According to SF Eater, the chef behind Winnie’s — a seafood restaurant that prioritizes sustainability — is preparing to debut a new concept in Healdsburg.
Coming to 333 Healdsburg Avenue, taking over a space formerly home to both Molti Amici and Campo Fina, Bistro Lagniappe will land near establishments such as Brew Coffee and Bar House, Haku Sushi, and Kalimera Bar & Grill.
“We’re trying to be aware of what it means to be a part of this community and be in Sonoma County,” Chef Jacob Harth tells the Journal. He adds, “This restaurant really starts with our local community, and we’re making it an experience that’s for the locals.”
Bistro Lagniappe will use the existing pizza oven to roast meats, fish, shellfish, and vegetables.
“An early menu boasts mussels on the half shell straight from that oven and dressed in sungold tomatoes and fig leaf; grilled trout in browned butter and summer squash; and clay pot rabbit with chanterelles and creme fraiche,” the Journal continues.
“We’re exclusively sourcing from regenerative farms, [and cooking with] pasture-raised meats, grass-fed meats, line-caught fish from the Sonoma coast,” Harth tells Eater. “So expect to see a lot of seafood that I’m kind of known for, but also everything else.”
Bistro Lagniappe is slated to open in late May.
