According to a recently submitted permit application, Chicago-based burger joint chain Cock Robin is opening in Sebastopol.

Coming to 6700 Sebastopol Avenue, Building 1 — taking over the former Seismic Brewing location — the eatery will land near establishments such as Coffee & More, the seafood restaurant Oyster, and Sebastopol Bike Center.

What Now San Francisco reached out to Barney Aldridge — who is also the owner of Barlow — to inquire about the upcoming restaurant, but he could not provide additional information before publication.

According to Sonoma Magazine, Aldridge will operate the restaurant alongside chef Jared Rogers of Petaluma’s Easy Rider, who will reimagine “the burger and milkshake menu as Cock Robin migrates from Naperville to its new home in Sebastopol.”

“I want it to be as healthy and organic as possible,” Rogers tells the Journal, sharing that the menu will boast salads, sandwiches, plant-based dishes, and “old-school classics with a modern spin.”

An opening date has not been announced yet, so stay tuned for updates.
