Jupiter Room, a martini-focused cocktail bar, is getting ready to open in San Francisco at 2065 Polk Street.
The bar is being launched by Michelin-starred chef Peter Hemsley and mixologist Trevin Hutchins, according to Instagram posts from Jackson Square Hospitality. While an exact opening date has not been confirmed, the team is targeting Summer 2026 in the former Lord Stanley space. Customers can expect elevated comfort foods like burgers and shrimp cocktail alongside innovative cocktails, including playful mashups such as the “Hulk Smash.”
Hemsley previously ran the seafood restaurant Aphotic in SoMa, which closed in October 2024 after operating for 1.5 years, according to SF Standard. He cited challenges with the location near the Moscone Center, including low foot traffic and post-pandemic urban conditions, as the reason for the closure. The Jupiter Room represents a pivot toward a more approachable late-night concept, focusing on fun cocktails and casual dining.
The new Russian Hill location requires a significant buildout to accommodate a full bar. The space had been vacant following Lord Stanley’s closure, and Hemsley and Hutchins have shared updates on the construction process and pop-up events leading up to the official opening.
The menu will focus on elevated comfort dishes and cocktails with historical nods, referencing 19th-century mixologist Jerry Thomas, according to SF Standard. The bar aims to appeal to residents, industry professionals, and visitors seeking a casual yet inventive cocktail experience. Jupiter Room’s launch is part of Hemsley’s broader expansion in San Francisco, which includes plans for a separate project at the former Kells Irish Restaurant in Jackson Square. Hutchins, who is also credited as a cocktail stylist for a New York Times bestseller, will lead beverage operations.
