Pibil Pop-Up Prepares First Brick-And-Mortar Opening In Fairfax

The husband-and-wife team are planning their biggest expansion yet.

After years of operating between disparate locations, Pibil Yucatan Cuisine is finally getting a permanent home.

Husband-and-wife owners Elena Fabbri and Gustavo Mutul began their mission to bring authentic Yucatán-styled pibil to Marin County nearly five years ago. Starting out as a farmer’s market food stand and then expanding to two more pop-up locations, the pair is finally ready to move their signature Yucatán dishes to their own full-time brick-and-mortar store.

Pibil, which means “to bury” in the Mayan language, is a national dish of the Yucatán region that features marinated suckling pig wrapped in banana leaves and roasted in a pit. Slow cooking is an especially important part of the preparation, and chef Gustavo Mutul knows how integral quality meat is to the success of Pibil.

Elena Fabbri was born in Tuscany and has been making authentic Italian roasted pork for nearly her entire life. Her husband Gustavo grew up in a small town in Yucatán, and together the two have combined their inherited family recipes for a signature taste that is unlike any other. Their signature pibil dishes have been exploding in popularity recently, finally enabling the pair to expand to a full-time restaurant.

Beginning as a small kiosk at San Rafael Transit Center (which has unfortunately closed) and moving to a weekend pop-up at George’s Nightclub, the ambitious restaurateurs are finally getting a restaurant with its own full-time kitchen. This will be a considerable help to Elena and Gustavo as they expand their menu to include a wider variety of Yucatán specialties as well as a traditional selection of beer and wine.

A recent filing with the state reveals that Pibil will be moving to 123 Bolinas Road in Fairfax, though no word has been given on when they plan to open. The new location will feature a much bigger kitchen than their previous pop-up locations, as well as ample room for indoor and outdoor dining.
