Polo’s Corner Will Pair Customers with Good Eats

The family-owned restaurant hopes to be Livermore’s new favorite hangout.

Polo’s Corner has plans to open during the holiday season at 2002 Portola Ave. in Livermore. The space at the Portola Village Center was formerly occupied by Rubio’s Coastal Grill. The family-owned restaurant is brought to us by Pairings Lastra LLC, a partnership between Cardenas siblings Jeanette, Eric, and Ahiram.

Manager Eric Cardenas says Polo’s Corner is going to be a place for Livermore locals to hangout for breakfast, lunch, and dinner. The restaurant’s concept is a California kitchen with Mexican infusion, focusing on small plates made for sampling and sharing.

Polo’s Corner will incorporate many “pairings” on their menu, not only between food and beverages, but between plates as well. For example, they will serve three types of various menu items to try at once, from pancakes to ceviches, depending on the time of day. This is a perfect option for those who just want to try it all.

The restaurant will also serve beers, wines, and mocktails sourced from local winegrowers and brewers such as Altamont Beer Works. Cardenas confirmed to What Now San Francisco that while many aspects are still in the works, they hope to open by early December 2021.
