According to the Montgomery Village website, the Portland-based ice creamery Salt & Straw is coming to Santa Rosa.

Joining the shopping center at 700 Village Court, the concept will land alongside tenants such as Blue Bottle Coffee, Berkeley’s Fieldwork Brewing, and Sprinkles Cupcakes.

What Now San Francisco reached out to the concept’s founder and CEO, Kim Malek, to inquire about her plans for the spot, but she could not provide additional information before publication.

Nevertheless, the business offers a brief introduction on its website: “At Salt & Straw, anything is possible. Crafted with unthinkable care, our team cooks, freezes, candies, smashes, drizzles, ribbons, spoons, and sprinkles, creating flavor profiles that awaken taste buds. Using ice cream as a blank slate for storytelling, we fearlessly explore ingredients, discover emerging artisans, and share inspiring, unifying experiences.”

The concept currently operates 43 ice cream shops across Arizona, California, Florida, New York, Oregon, and Washington.

Concerning an opening date, the Salt & Straw website shares that the Village Court spot is “coming soon.”
