Two Sommeliers Unveiling New Restaurant and Wine Shop in Menlo Park

According to the San Francisco Chronicle, a new chicken-focused eatery and neighboring wine shop are opening in Menlo Park.

Coming to 720 Santa Cruz Avenue, the restaurant, Cafe Vivant, will land near establishments such as Bagel Street Cafe, Coffeebar, and the pastry shop Mademoiselle Colette.

“Menu specifics aren’t yet available, but Cafe Vivant will serve chicken in many forms… Other parts of the bird will be utilized in dishes, from eggs to its bones for a consommé,” the Journal reports.

Behind Cafe Vivant are sommeliers Jason Jacobeit and Daniel Jung, the owners of the New York City-based concept Somm Cellars — a business that “focuses on expertly curated and impeccably sourced fine wines and collectable spirits, with a particular focus on the wines of France’s Burgundy region,” according to its website.

Poultry provider Rob James and Chef Jared Wentworth are also on the Cafe Vivant team.

“Wentworth has labored for months over how to properly brine the birds, landing on a mixture that incorporates umami-rich shio koji, made from fermented rice,” the article continues.
