Union Jack Lounge and Kitchen, a new concept led by Maurice and Sam Dissels, is preparing to open at 706 Main Street in Pleasanton.
The new concept could potentially open in the current home of Gilman Brewing Company, Pleasanton Speakeasy: Craft Cocktails & Brewery, according to a recent liquor license application. It’s unclear if Gilman Brewery will remain on this site or if Union Jack and Lounge will replace it. What is known is that this is the latest from the Dissels family. While no official opening date has been announced, the restaurant is expected to feature a full-service menu and craft beverages inspired by the Dissels’ culturally diverse cooking philosophy.
Union Jack Lounge and Kitchen is led by Maurice Dissels, founder and executive chef of Oyo Restaurant in Pleasanton, which he opened in 2019 with his sons Sam and Leicester. Maurice was born and raised in British Guiana (now Guyana) and began learning to cook from his grandmother, whom he affectionately nicknamed “Oyo.” He was formally trained in culinary arts and food science, studying Cajun and Caribbean cuisine, and continued his professional development at the Culinary Institute of Chicago and the Culinary Institute of America’s Greystone campus in Napa Valley.
Sam Dissels, who manages operations at Oyo, brings more than a decade of front-of-house experience. He grew up in Pleasanton, has worked in the downtown food scene for eight years, and is currently training for Sommelier certification. The family’s experience running Oyo has emphasized approachable, culturally rich dishes and community engagement, which they plan to continue with Union Jack Lounge and Kitchen.
While nothing has been confirmed yet, the menu will likely blend flavors from a variety of cultures, including East Indian, West African, Portuguese, Chinese, British, Venezuelan, and Brazilian influences. Signature items will likely showcase bold, complex seasoning and family-inspired techniques, highlighting the Dissels’ philosophy of “muxalace,” or blending a bit of everything in a dish.
Considering Pleasanton’s downtown dining scene and the Dissels’ local roots, the proposed location reflects the family’s continued focus on culture, community, and accessible, flavorful cuisine. Maurice Dissels has emphasized that their restaurants are family-oriented and community-centered, rather than defined solely by their Black ownership.
