A New Distillery Called Ivre Bon Bons Set to Open in the Judkins Park Area

Distillation, a traditional method that exploits boiling point variations, finds its primary application in distilleries for crafting alcoholic beverages like whiskey, vodka, etc.

According to a recent permit filing, Ivre Bon Bons will open soon in the Judkins Park area at 1422 31st Ave S.

“Ivre Bon Bons is a chocolatier that specializes in liquor-filled chocolates.  Born from COVID lock-down ingenuity, Danielle and I, her husband, jumped into making chocolates during the quarantine.  With Danielle spending her early year in Germany, she wanted to focus on the forbidden liquor-filled chocolates she would sneak from her parents,” Greg Whisler, the co-owner, told What Now Seattle.

“After much trial and error, as a husband and wife team, we were able to create a proprietary process to make the delicious treats.  Using all-natural ingredients the chocolates are similar to a little cocktail encapsulated in a small chocolate shell.  Since spirits and chocolate naturally pair well the characteristics of the liquor are allowed to stand out in a very unexpected way. We are currently finishing our WSLCB licensing application process with a goal of opening our store in mid-September.”

Greg also stated that Ivre Bon Bons knows that local is important and works only with local distillers to provide the spirits in their chocolates. The chocolate used is currently Belgian with the eventual goal of finding a local artisan supplier.

The address of Ivre Bon Bons appears to be a hub of entrepreneurial activity, hosting a variety of registered companies, such as Pink Dahlia Spa LLC, Dahlia Spa, City Rain Inc, and Prussian Blue. One of the entities associated, City Rain Inc, was established on March 29, 1996. While the business was open for a respectable 2 years and some change, it has since become inactive.

Similarly, another player in this address’s business roster is Dahlia Spa LLC, which came into existence on November 29, 2005. Operating for a relatively short duration of one year and 3 months, it too is no longer active, according to Clustr Maps. Prussian Blue, a home decor store, has chosen the same address as its base of operations and is still currently listed at said address.

When looking even further into the registered agents on the permit filing, Ivre Bon Bons has been an active company since August 25th of 2022, according to Bizapedia. The filing is under one of the two registered agents from the permit filing, Danielle Whisler. The second agent listed, Gregory Whisler, is also behind American Business Consulting INC since 2012, according to Open Gov.
