A New Establishment Called Kas is Slated to Open Near the Seattle Convention Center

According to Cafe Yumm's website, the Seattle location closed in November of 2023.

According to a recent permit filing, Kas will open its doors near the Seattle Convention Center at 717 Pine Street.

A representative of Kas was not immediately available for commentary upon What Now Seattle’s request.

While an official opening date and what Kas plans to offer have yet to be confirmed, according to the filing, Kas filed for soju service, spirits, bar, and wine rest service bar, and an off-premises selling license for wine.

Kas will come from KKHH INC. According to Bizapedia, KKHH INC. was incorporated approximately a month ago. Hun Lee is listed on the business filing as well as the permit.

When doing more research on the property listed for Kas, according to Yelp, the address was once home to Cafe Yumm!, and is now marked as closed. On Cafe Yumm’s website, the address is no longer listed to be one of their open locations.

Considering that Kas filed for soju service, for those who are unfamiliar with soju, soju is considered to be a traditional Korean distilled spirit. Typically distilled from rice, barley, or wheat, this clear liquor has a mild flavor profile with a hint of sweetness. Soju is often enjoyed in social settings, with the communal aspect of sharing drinks central to its appeal.

Its relatively low alcohol content compared to other spirits makes it approachable, and its versatility allows for various drinking styles, from sipping it neat to incorporating it into cocktails.
