A new restaurant by the name of Tivoli will soon open in the Fremont area, located at 730 N 34th St, according to recent permit filings.

A representative from Tivoli did not immediately return What Now Seattle’s request for comment.

While an opening date and the menu offerings for Tivoli have yet to be confirmed, Yasuaki Saito, the owner of Tivoli, currently owns a bakery named Saint Bread. Located on the serene Portage Bay waterfront, just a stone’s throw away from the University of Washington, Saint Bread stands as more than just a bakery. It is a haven where the craft of baking intersects with the power of community.

The name pays homage to the Danish words for “true bread” – sandt brod, while also playfully alluding to the renowned Plane Bread. It encapsulates their belief that tending to something as simple as bread is, in fact, a sacred act. Once owned by the revered Jensen family of boatbuilders, it was the home of the illustrious Jensen Motor Boat Company.

At Saint Bread, their purpose extends far beyond the realm of baking. They operate with intentionality and an unwavering commitment to their own well-being and that of their community.
