A new restaurant is set to spice up Seattle’s Capitol Hill neighborhood.
Blue Willow, a concept from Tyger Tyger owner Benjamin Chew is set to take over the former Stateside space at 300 E. Pike St., according to Capitol Hill Seattle Blog.
Stateside closed its doors in August after a decade of serving Seattle a fusion of flavors from France, China and Southeast Asia. The restaurant shared a farewell message on Instagram, stating, “Thanks for the memories, Seattle!!!”
While few details have been reported about the new project, Chew is no stranger to Capitol Hill. The outlet reported he was part of the ownership team that took over Lionhead on Broadway.
Both Tyger Tyger and the former Lionhead, which closed to make way for Cheers!, featured Sichuan-inspired cuisine.
Tyger Tyger features pork belly buns, Dan Dan noodles, soft-carb curry fried rice and blistered green beans. When it was open, Lionhead offered pork dumplings, chili pork dumplings, Gung Bao chicken and a variety of rice and noodle dishes.
Perhaps, Blue Willow will follow suit.
