A popular pop-up cookie concept may soon open a brick-and-mortar location as demand for its cookies continues to grow.
Cove’s Cookies, led by founder and baker Adriana Shaffer and her business partner Jaxon Marquardt, currently sells its treats at pop-ups and farmers markets in Tacoma, Gig Harbor and Port Orchard.
In an Instagram post shared last September, Shaffer wrote, “I typically post in my bio/on my story where I will be for the week! Right now I’m just a pop-up but hoping to get a brick and mortar soon!”
Following up this year, The News Tribune reported the duo hopes to open their new bakery later this year, hinting they have found a location.
Cove’s Cookies is known for its larger-than-life homemade cookies rotating monthly. Standouts include the chocolate chip cookie, the one that started it all, made with brown butter, Ghirardelli chocolate chips, semi-sweet chocolate chips and topped with Maldon flaky salt.
Another favorite is the animal cookie, a sugar cookie base filled with animal cookies, stuffed with a Golden Oreo and topped with white chocolate and sprinkles.
The outlet also reported Cove’s plans to expand its menu at the new bakery, adding a variety of banana breads and cinnamon rolls topped with fresh fruit.

In the meantime, upcoming pop-ups are scheduled for March 1 at Tacoma Sunday Market, March 8 at the Haunted Farmers Market, and March 15 at Sedgwick Hill.
